Which oil is extra virgin olive oil?
Olive oil that has not been tested in laboratory and organolepticaly, thus did not met the reference standards officially set at EU level, cannot be classified as extra virgin olive oil. Extra virgin olive oil is oil obtained directly from the olive fruit by exclusively mechanical means, which contains a maximum of 0.8 grams of free fatty acids expressed as oleic acid per 100 grams of oil and whose properties correspond to those specified in the EU Regulation.

When the harvest time is optimally estimated, the hand-picked olives are kept in the shade throughout the day, and as soon as the harvest is completed that day, they are processed. They are processed in the oil mill with modern technology, where they are processed into oil using a cold-pressed process at temperatures up to 27°C. After filtering, the oil is then stored in stainless steel barrels, and later packaged in the small dark glass bottles with the safety cap. The oil is minimally exposed to oxygen. It is protected from higher temperatures and light. These are the most important conditions for preserving the nutritional and taste qualities of the oil.
With primarily respect for the nature, but also the most up-to-date globally available knowledge in the olive growing sector, every step of this process has been carefully studied in order to comply with all the highest olive oil industry standards.
Today, most of the food we consume has a fairly long journey from the field to the table. The shorter that journey, the fewer points at which the product stops before consumption, the more preserved it reaches the consumer. Today, it is truly a luxury, and lucky are those who have the opportunity to consume fresh, local products, from a reliable source, that arrive quickly.
